- 2/3 cup (160 ml) whole milk

- Your egg whites and yolks should be separated. Set aside the whites.
- The flour, salt, milk, vanilla, and egg yolks should only be combined briefly in a large bowl.
- Whip the egg whites on medium speed in a another container using a hand mixer or stand mixer. While the mixer is still running, slowly pour the sugar into the egg whites as they start to thicken. The egg whites should be beaten until they just begin to hold stiff peaks. At this point, they will still look glossy. ( See Tip )
- Use a rubber spatula to fully incorporate the egg white mixture into the pancake batter after adding roughly a quarter of it. The batter will become lighter as a result, making it simpler to fold in the remaining egg whites. Use the rubber spatula to gently fold in half of the remaining egg whites into the mixture while being mindful not to deflate them.
- When there are no longer any visible white streaks, add the remaining egg whites and gently fold in once more.
- Over medium heat, preheat a skillet or griddle. Pour 1/4 to 1/3 cup of batter per cake onto the prepared skillet and use a spoon or measuring cup to carefully spread the batter into a circular. Even without baking powder, bubbles will still develop on the top.
- When the bubbles pop and the bottom of the cakes begins to lightly brown, turn them over once. Cook until the other side is just beginning to brown. If not serving right away, keep warm in a 90°C oven.

- Note regarding egg whites & yolks, if you don't have time to allow your eggs warm up naturally, set them in a bowl of warm water for a few minutes before cracking and separating them. If egg whites are at room temperature, they will whip to stiff peaks much faster. For this recipe, it is imperative that you whisk the egg whites for a sufficient amount of time to achieve stiff peaks. It will take much longer for cold egg whites to whisk to stiff peaks, though.
