Ingredients

For BBQ Shredded Chicken Sandwich
  • Boneless & skinless chicken breasts 900-grams
  • Salt and pepper
  • 3     tablespoons salted butter 
  • 1      cup barbecue sauce
  • ¼   cup apple cider vinegar 
  • ¼   cup water
For Coleslaw
  • 3    cups of pre-shredded coleslaw mix in bags
  • 2    teaspoons apple cider vinegar
  • 2    teaspoons granulated sugar
  • ¼  cup mayonnaise
  • Salt and pepper
For Sandwiches
  • 6   hamburger/brioche buns
  • 6   tablespoons mayonnaise

Direction

For BBQ Shredded Chicken Sandwich
  • Mix the apple cider vinegar, water, and barbecue sauce in a medium bowl. Place aside.
  • Chicken breasts should be dried off and lightly seasoned on both sides. Melt butter in a sizable skillet with a cover over medium-high heat.
  • Chicken breasts should be added to the pan and cooked until golden browned. Pour the barbecue sauce mixture over the chicken breasts after flipping them.
  • Keeping the sauce simmering, bring the sauce to a simmer and lower the heat to medium-low. Cook for 5 minutes with a cover on. It usually takes 3 to 6 minutes to flip the chicken, cover it again, and cook it until an instant-read thermometer put into the centre of the thickest piece of meat indicates 73°C.
For Coleslaw
  • Stir all the coleslaw ingredients together in a medium dish while the chicken simmers. If necessary, taste and add extra sugar, salt, or vinegar according to your taste
Complete the process, then assemble the BBQ chicken sandwiches.
  • After moving the chicken to a cutting board, give it five to ten minutes to rest. Stirring regularly, let the sauce boil uncovered for an additional few minutes or until it thickens.
  • Chicken breasts should be shredded before being added back to the saucepan. Stir to thoroughly coat.
  • Set the broiler to high. The buns should be split apart and placed on a baking sheet. The buns should be heated through and lightly browned after 1 to 3 minutes under the broiler. While your buns are baking under the broiler, stay close to them since they can burn very rapidly.
  • Mayonnaise, shredded chicken, and coleslaw should be spread on top of the toasted buns. Fill it up and enjoy!

Bonus Tip

  • By placing your palm on top of the chicken breast, divide any huge chicken breasts into two equal cutlets.
  • You can substitute 2 12 cups of shredded cabbage and 12 cups of grated carrots for the 3 cups of pre-shredded bagged coleslaw mix.
  • Cutting the top and bottom of the breast into two thin, even pieces by running a sharp knife horizontally through the centre of it.
  • If you don't like coleslaw, you may simply remove it. The crunchy texture and somewhat sweet, sharp flavour of the slaw perfectly complement the BBQ chicken sandwich.
